i have finally begun making valentine's day chocolates. solid chocolate hearts in several sizes, from bite sized to almost 2/3 lb. thats a lot of chocolate. the large hearts come in white, milk and dark chocolate. i really wanted to see if i could eat a whole one in one sitting last night. thankfully, i decided against the attempt. maybe this weekend.... i'm also working on a signature dessert for this weekend. so far, there are several possibilities, but nothing final. i want to try something different and unusual. i'm thinking of a pasrty topped with chocolate ganache, dark chocolate cake and a strawberry/champagne mousse. we'll see if it works, and if it is edible. then its up to the taste testers to decide if its a go. as for valentine's day, all next week we will be featuring champagne truffles and fresh chocolate dipped strawberries. those are our two top requests this time of the year. remember these words of wisdom.... fine chocolate is less expensive than fine jewelry!
